Simple Fish Recipes That Celebrate Fresh Ingredients

The best fish dishes are often the simplest ones. When you have truly fresh fish, you don't need complicated sauces or elaborate techniques. Here are some straightforward recipes that let your excellent fish be the star.
Pan-fried salmon with lemon and butter. This is as simple as it gets. Heat a knob of butter in a frying pan, season your salmon fillet with salt and pepper, and cook skin-side down for 3-4 minutes until the skin is crispy. Flip and cook for another 2-3 minutes. Squeeze fresh lemon over it and serve. That's it. The beauty is in the quality of the fish and the contrast of crispy skin with tender flesh.
Baked cod with herbs. Place a cod fillet on a piece of baking parchment. Top it with fresh herbs like parsley or dill, a slice of lemon, a pinch of salt, and a drizzle of olive oil. Fold the parchment into a parcel and bake at 180°C for 12-15 minutes. The fish steams in its own juices and emerges perfectly moist and tender.
Mackerel with tomato and olive salad. Grill or pan-fry mackerel fillets until the skin is crispy. Serve alongside a simple salad of cherry tomatoes, olives, red onion, and a lemon vinaigrette. The richness of the mackerel complements the brightness of the salad perfectly.

The flesh will be incredibly moist, and the presentation is impressive.
Fish and chips at home. Make a simple batter with flour, baking powder, salt, and cold sparkling water. Dip cod or haddock fillets in it and deep-fry until golden. Serve with chips and mushy peas. It's not fancy, but homemade fish and chips are incomparably better than most takeaways.
Ceviche. If you're confident about fish freshness, try this. Cube very fresh white fish and "cook" it in lime juice with diced red onion, coriander, and chilli. After 30 minutes, the acid denatures the protein and it's ready to eat. It's refreshing and showcases the fish beautifully.
